What You Will Need

• Confectioners’ sugar for garnishing

• 1/2 teaspoon of fresh lemon juice

• 8 large egg whites at room temperature

• 1/2 cup of sugar, plus 2 tablespoons

• 3 tablespoons of warm water

• 3 large egg yolks

• 1 and 1/2 teaspoons of vanilla extract

• 4 tablespoons of unsalted butter, plus extra for preparing the molds

• 7 ounces of chopped bittersweet or semisweet chocolate

• 6 6 ounce ramekins

• A medium heatproof bowl

• A saucepan

• A standing mixer

• A baking sheet

 

What to Do

• A day ahead, brush the ramekins with soft butter and then coat with sugar before placing them in a freezer

• Set an oven rack in the lower third of the oven and preheat to 400 degrees F

• In the medium heatproof bowl, add the chocolate and butter together

• Fill the saucepan with an inch of water and bring it to a very slow simmer

• Set the bowl over, but not touching the water

• Stir the chocolate occasionally, until it is smooth and melted

• Remove the chocolate from the heat and stir in vanilla extract

• Set the chocolate aside

• In the standing mixer, combine the egg yolks and warm water

• Beat the egg mix until frothy

• Gradually add 2 tablespoons of sugar and continue beating about 5 minutes, until ribbons form

• Lightly fold the yolks into the chocolate mixture

• Rinse the mixing bowl well

• Remove the ramekins from the freezer

• Put the egg whites in the bowl of the mixer and add lemon juice

• Beat the egg whites on medium until frothy

• Gradually add in the remaining 1/2 cup of sugar

• Increase the speed to high

• Beat until the whites are able to hold a stiff, but not dry peak

• Fold about a third of the egg whites into the chocolate quickly

• Fold the remaining whites in until blended

• Gently ladle the soufflé mixture into the ramekins

• Place the ramekins on a baking sheet

• Level off the surface with a straight edge and scrape any excess mixture back into the bowl

• Immediately place in the oven and bake between 18 and 20 minutes, until the soufflé rises about 1 and 1/2 inches from the ramekins and the tops are just barely browned

• Remove the soufflés from the oven

• Dust with confectioners’ sugar and serve immediately
